Temperature is perhaps the most important factor when preserving, storing, and serving your wine. Getting the temperature just right will help your wine age in an optimal manner resulting in a better flavor and aroma. Here are a few tips to help you get the temperature just right.
Keep your wine collection away from heat and air conditioning vents. Don’t put your wine on top of the refrigerator or anywhere else that may heat up from time to time. Make sure your collection is also away from the sunlight. Sudden fluctuations in temperature can prematurely age your wine.
The 20 / 20 rule
Ideally, red wine should be served a little warm and white wine should be served a little cold. However, wine that is too cold or warm will not reach their full potential. The 20 / 20 rule is a great way to get your wine to the perfect serving temperature. After storing your red wine at room temperature, put it in the refrigerator for 20 minutes before serving. This way, it will be slightly colder than room temperature. After storing your white wine in the refrigerator, put it in room temperature for about 20 minutes. This will warm it up a little.
Cellars, Closets and Refrigerators
As your collection grows, it may become more difficult to store your wine. You’ll want to find a space large enough that is away from heat and sunlight. Cellars are ideal because they are typically cold and have limited windows. In California, however, very few of us have adequate cellars, so we tend to rely on specialized wine refrigerators and dark, cool closets. These can only hold so much, however, so many California wine collectors have to turn to storage units.
